Lauren, I've never met you, but thank you for including my pun-filled post when you scrubbed Instagram for gnocchi cauliflower content.

Sometimes you want to amp things up and make a sauce more complex than tomatoes and butter. Enter one of the best cuts of meats for braising - the short rib. But this is a weeknight meal, so we're taking a shortcut. Jarred tomato sauce. Rao's if you can afford it, you're other favorite if you're ballin' on a budget.

Whole 30 Instant Pot Short Rib Ragu 

Serves: 2-4


  • 1 package Trader Joes Cauliflower Gnocchi

  • 2 lbs bone-in short ribs

  • 2 garlic cloves, minced

  • 1 small white/yellow onion, diced

  • 1 jar of your favorite tomato sauce (.00001 gram added sugar? Don't even think about it. You're sticking to Whole 30.)

  • 2 T fresh basil and parsley, chopped

  • 1 T olive oil

  • Crushed red pepper flakes (optional)


  1. Pat short ribs dry with a paper towel then season with salt & pepper on both sides. Set your Instant Pot to stun (read: saute mode). Brown ribs for 4 minutes on each side. 

  2. Remove ribs with tongs and set aside on a plate. Drain excess fat drippings. Or leave some in for extra flavor. Your choice. Add some oil to the pan, then add onions to the pot. Saute for a few minutes. Add in garlic and do the same. For those not adhering to Whole 30 (or those who aren't Bible-strict [is there a such thing as Torah-strict?] ), now would be a good time to add a few glugs of wine to deglaze the pan.

  3. Pour in the entire jar of tomato sauce (Buy a Tide-to-Go pen on Amazon because you splattered some on your shirt.) Add a pinch of salt and crushed red pepper flakes. Mix well. Nestle in short ribs. Cover Instant Pot and cook on manual mode for 30 minutes.

  4. Perform a quick release steam maneuver that will have those patient enough for a natural release super jealous. Remove ribs from pot. When cool enough to handle, remove bones (they just slide right off!) and shred meat into small pieces. Add shredded short ribs back into pot along with a pinch of herbs. Set Instant Pot to saute. As the ragu simmers and reduces, cook Cauliflower Gnocchi. PRO TIP: The best way to cook these pillows of carb-free goodness is to pan-fry them. Don't even think about putting them in the microwave.

  5. Either put gnocchi into a bowl and ladle sauce on top, or add sauce to the pan as the gnocchi finish cooking. Either way, make like salt bae and sprinkle some fresh herbs over top. Parmesan cheese wouldn't hurt either.
