Homemade Whole 30 Salmon Poke Bowls

Poke Bowl

Don't make your own Poke bowls. It's expensive to get quality raw fish, and have you ever tried making perfect sushi rice? Forget about the fact that the price of avocados is also too damn high. Please - for the love of all that is holy - frequent a place that will charge you 5x the amount for "authentic" Poke because it's "trendy" and "exotic".

Or, you could head to the nearest Asian grocery store (H Mart for the win) to stock up on sushi-grade salmon, seaweed salad, and whatever colorful yet nutritious items you'll be throwing down to get those social media likes.

Serious Eats does a wonderful job demystifying the marketing myth behind sushi & sashimi-grade fish. TL;DR - Buy from a reputable, trustable fish monger or grocer.

Homemade Whole 30 Salmon Poke Bowls

Serves: 4

Rice Bowl

  • 2 packages frozen Cauliflower rice

  • 1 lb "sushi-grade" salmon, cubed (or tuna, hamachi, Patrick from SpongeBob, etc.)

  • 1 mango, diced

  • 1 avocado, diced

  • 2 green onions, diced

  • Spicy mayo (Just make mayo - it's so easy! - and add some Sriracha or Sambal)

  • 1 cucumber, peeled and sliced (don't @ me, #TeamVegetablePeels)

  • Pickled ginger

  • Wasabi

  • Toasted sesame seeds

Salmon Marinade

  • 3 T Coconut Aminos (or soy sauce for those who think they're better than Paleo, Whole 30, etc.)

  • 1.5 T sesame oil

  • 1 T rice wine vinegar

  • 2 tsp Sriracha

  • 1 tsp grated ginger

  • 1 large clove garlic, minced

  • 1 green onion, sliced

  • 1 tsp toasted sesame seeds

  1. Microwave the cauliflower rice. If you want it the consistency of sushi rice, see here, here, or here (Links represent the top three Google results. If you rank 4-1,000,000,000 and want to improve your SEO, slide into the DMs).

  2. Add marinade ingredients in a bowl. Whisk it. Whisk it real good. Add salmon cubes. Marinate in the refrigerator - COVERED - for at least a half hour.

  3. Put cauliflower rice in bowl. Add salmon cubes. Then the rest of the ingredients however you see fit.

  4. Spend a half hour getting the perfect picture because the camera eats first. Giving avocado cubes more real estate will increase your Instagram engagement.

Bone Apple Tea, as the kids say.
